If you like pancakes but you don’t what to use the low nutrtional white flour, banana-egg pancakes are your friend. They are delicious, nutritious, easy to prepare and you can combine them with loads of things. If you want to add some fibers, just add some oats.
I always buy fruit which is in the season and this time I had peach. It turned out that banana-egg pancakes and peach are a perfect match. Especially when you pan fry the peach for a minute or two to make it warm. Top it of with some superfoods like goji berries and mulberries to make it extra healthy, some shredded coconut and honey for extra sweetness and your day couldn’t start any better. Yum!
Ingredients for one person
- 1 banana
- 2 eggs
- 2 tablespoons of oats
- 1 peach
- a handfull of goji and mulberries
Mash the banana with a fork first until there are no solid parts anymore. Break two eggs in a bowl and add the mashed banana and the oats. Mix it together. Cut the peach into pieces.
Now heat up some butter or oil (like coconut oil) in a pan and try to make 3 little pancakes. Or you can add the whole mixture to make a big one. What you prefer. Fry them for about 3-4 minutes on each side until hey have a nice color.
When the pancakes are done you can put them on a plate. Use the hot pan to fry the peach for 1-2 minutes and add the berries at the end. Put the warm peach on top of the pancakes and finish with a drizzle of honey. Enjoy!
