Banana-Egg Pancakes with Dates and Walnuts

These banana-egg pancakes are a great breakfast to start the day with. They keep you going for a long time, they are healthy and very easy to make. I chose to combine the pancakes with walnuts and dried dates to make them extra tasty and nutritious.

Dates contain a lot of fibers, vitamins and minerals and add sweetness to the pancakes. Do not worry, the sugars are good sugars. Walnuts also contain good minerals and vitamins and are a rich in omega-3 fatty acids. Just like dates they are a very good source of energy. So if you are looking for a healthy, nutritious and tasty breakfast, you have to give this a try.

  • Two eggs
  • One ripe banana
  • 6 walnuts
  • 5 dates

First, mash the banana with a fork until there are no solid parts anymore. Put the banana mash in a bowl, add two eggs and stir everything really well. Chop two dates and add them to the banana-egg mixture. Heat up some oil in a pan and try to make three little pancakes just like in the picture. Turn the heat to medium. Fry the pancakes on both sides until they are done and have a nice color. It will take about 3 or 4 minutes on each side.

Chop the walnuts and the rest of the dates in the meanwhile and put them on top of the pancakes when they are done. Enjoy your breakfast!

(Tip: Of course you can use a lot of other combinations as well if you like. Be as creative as you want but my advice is to use healthy ingredients. You can add fresh pineapple with coconut for example to make them more exotic or you can combine them with blueberries. Do what you like.)
