Beet Root Bowl with Black Quinoa and Blueberries

Looking for a funky breakfast in the morning? Than this might be something for you. Beet root for breakfast? Sure why not. It’s healthy and when you blend it with fruit like banana, it gives such a cool color. Almost unnatural but I can tell you, this breakfast very natural. It will give you a great boost, both for your senses as for your body. Oh, and did I tell you it’s very delicious? I’d say try it.

Ingredients for one person

  • 50g black quinoa
  • 1 small beet root
  • 1 banana
  • ½ apple
  • 2 tangerines
  • Handful of blueberries
  • 1 teaspoon of chia seeds
  • 1 tablespoon of cacao nibs
  • 1 tablespoon of sunflower seeds

Cook the quinoa in about twice the amount of water for 10 minutes. Take it off the heat and put it away for a couple of minutes with the lid on.

Put the beet root, the apple, the banana and 1 tangerine with a cup of water in a blender and blend everything into a smoothie.

Now put the smoothie with the quinoa and add the rest of the ingredients. It’s that simple.
