Black Quinoa with Figs and Goat Cheese

I am a big fan of seasonal fruit and vegetables. Why? They’re in season, it is the right time to eat them. The price and the quality is better. On Saturday mornings, I like to stroll around on our local market to search for seasonal fruit and vegetables.

In this case I found wonderful big purple figs. Bingo! Of course I bought a few. But I didn’t know what to do with them yet. The rest of that day I went cycling in the forest and I gave my mind some space to develop a recipe.

In the forest, leaves were already changing color. Autumn was about to arrive. I like autumn but I think it is bitter-sweet. Sweet because nature is beautiful and it is a great time to harvest berries and nuts. Bitter because where I live, it means that days are getting shorter and the weather is usually bad in autumn.

Bitter-sweet. Suddenly ingredients started to come together in my mind and there it was, my new recipe. I made it that evening and I have to tell you, it tastes and looks fantastic. It’s quite simple to prepare and to top it off, it’s very healthy. You can have it for lunch or as a light dinner. Try it and enjoy!

Ingredients for one person

  • 1 big purple fig
  • 70g black quinoa
  • A small red onion
  • ½ eggplant
  • 50g soft goat cheese
  • A handful of arugula
  • A small hand of hazelnuts
  • A tablespoon goji berries
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey

Cook the quinoa as said on the package. Cut the eggplant in about 1cm thick slices. Heat up a grill and grill the slices until they are soft and have nice dark stripes. Cut them again into smaller pieces as you like. Chop 1 half of the onion into small pieces and the other half into rings.

Cut the arugula into smaller pieces and cut the hazelnuts in half. Put the quinoa once it’s done in a bowl and add the small pieces of onion, the arugula, the walnuts, the eggplant, the olive oil and 1 tablespoon of honey. Mix everything together.

Put in on a plate. Crumble the goat cheese on top, then the onion rings and finish with the fig. Drizzle the rest of the honey on top and you have a beautiful meal. If you like you can add some extra arugula. Bon appetite!
