French Toast with Fried Banana and Raisins

French Toast Breakfast

When I was a little boy, my dad used to make a more basic version of this with old bread. It’s an oldschool recipe and I don’t hear a lot of people about it anymore. Which is a shame because it is actually very nice.

In Holland we call them ‘wentelteefjes’ but the English word is French toast. The tradition is to eat it with sugar but I decided to make a new version of it. A better version and it turned out great.

In this recipe, I used more traditional ingredients to keep a feeling of nostalgia but of course you can add all kinds of ingredients like the many superfoods we know nowadays. Be as creative as you are and enjoy.

Ingredients for one person

  • 1 banana
  • 2 slices of bread (spelt)
  • 1 egg
  • 100ml milk
  • 1/2 tablespoon of cinnamon
  • small hand of pecans
  • small had of raisins
  • a sgueeze of honey
  • some shredded coconut

Mix the milk, the egg and the cinnamon together in a bowl. Soak the bread in the mixture (on both sides) until everything is absorbed. Cut the banana in half.

Now heat up some (coconut)oil or butter in a frying pan and fry the slices of bread on both sides until they get a nice color. It will take about 5 minutes. Once they are done you can take them out and put the banana in the pan.

Also fry the banana on both sides until it gets a nice color and add some honey and the raisins right before it is done. Divide it over the slices of bread, add some pecans and some shredded coconut and voilà, your breakfast is ready.
