When I eat this fresh & spicy chicken wrap and close my eyes, I am instantly somewhere else. I see the beautiful white beach again, the turquoise water, the palm trees and the pelicans soaring above the water. Ok, I will tell you where it is. All the flavors in this wrap remind me of the wonderful town called Playa del Carmen, on the Caribbean coast in Mexico.
I have lived here for a while and I still dream about the amazing food I have had there. Lime and chili pepper, those are the key flavors in the area. In this wrap, I have put all my favorite Mexican ingredients together and it is simply delicious. It is freshness with a kick and a whole bunch of sunshine. Besides that, it is also very healthy. Perfect for a great lunch!
Ingredients for one person
- 2 Mexican tortilla wraps
- 1 chicken breast fillet
- ½ teaspoon chili powder
- 1 avocado
- 10 cherry tomatoes
- ½ chili pepper
- hand full coriander
- 1 lime
- 1 red onion
- 2 tablespoons olive oil
- salt & pepper
Cut the chicken into pieces and put them in a bowl. Add the olive oil and the chili powder and mix everything. Put it away for about 15 minutes. In the meanwhile you can start chopping the cherry tomatoes and the chili pepper. Put them in another bowl, add a little bit of salt and pepper and the juice of half a lime.
Cut the onion into rings, the avocado into slices and chop the coriander. Now it is time to heat up a grill pan. Make sure the pan is very hot before you add the chicken. Grill the pieces until they are done. Take them out of the pan and grill the onion rings until they are soft and have some color. You can heat up the Mexican tortilla wraps in a frying pan. It will take about a minute.
Divide all the ingredients over the wraps and squeeze some extra lime on top of it. Enjoy!
