Every Saturday, there is a market just around the corner of my apartment. I love to wander around on this market. I check out the seasonal vegetables, smell roasted nuts and taste great cheeses. It is also a place for good bargains and one thing I always come home with is a box of smoked salmon. It is one of my favorite fish but it has also another benefit.
Salmon is healthy, very healthy. It is full of omega 3 fatty acids which are good for your hearth and vains. I often make this salad with the salmon. It is tasty and very nutritious. The bell pepper is a good source of vitamine C, the spinach of iron and the lentils of protein. It is prepared in no time and here is how I make it.
Ingredients for 1 person:
- 200g blond or green lentils (from a can is fine)
- hand full of spinach
- 1/2 red bell pepper
- 1/2 red onion
- 100g smoked salmon
- juice of 1/2 lemon
- theespoon of fresh dill
- tablespoon of olive oil
- salt and pepper
Rinse the lentils and put them in a bowl. Cut the bell pepper into cubes, cut the onion into small pieces and chop the fresh dill. Also cut the salmon and the spinach into smaller pieces.
Mix it together with the lentils in the bowl. Now, squeeze the juice of half a lemon over it and add the olive oil, salt and pepper and mix it again. Enjoy your lunch!
