Talking about a power breakfast! This recipe contains not one but two ingredients which are considered as what we call superfood. This breakfast contains the best of the best and together with the warm apple it is delicious, comforting and very nutritious.
One of the superfood ingredients is quinoa. By the Incas it was already called the mother of all grains and not without reason. It is highly nutritious and has a lot of health benefits. It grows originally in the high Andes in Peru, Ecuador en Bolivia but since 2013 it has become much more popular in the rest of the world.
Quinoa is a great alternative for grains but actually belongs to the spinach family. It is much higher in protein than most standard grains and it is gluten free. Next to that it is also a great source of vitamin B2 and minerals like iron and magnesium. It is quite neutral in flavor and therefore an ideal base for every meal of the day.
Mulberries are the other superfood. They are not only very tasty but also extremely healthy. They contain a lot of vitamins (especially vitamin C), minerals and fibers. Next to that they are a great source of resveratrol which is very good for your blood.
Eat this dish for breakfast and it will easily keep you full until lunch!
(Tip: Add some nuts or/and seeds for an extra bite and flavor like walnuts and pumpkin seeds)
What do you need for one person?
One cup of quinoa – a small hand of mulberries – one apple sliced into dices – about half a teaspoon of cinnamon – a hand full of nuts and/or seeds if you like.
How to make it!
Rinse the quinoa and put it in a pan with two cups of water. Boil it for 5 minutes and put it away for another ten minutes so it can absorb the rest of the water. Heat a little bit of (olive)oil in a frying pan and add the apple. Add the cinnamon to the apple and fry it for about 6 minutes until the apple is a bit soft. The smell is great!
Mix the quinoa, the apple, the mulberries and the nuts and/or seeds together in a bowl and enjoy your power breakfast!
