Quinoa Ceviche

The first time I had ceviche was at a beach in Mexico. The flavors tasted like the atmosphere in the area. Fresh, sunny and full of life! I instantly became a fan. Ceviche is a typical Central and South American dish. It is made with fresh (raw) fish and/or seafood, marinated in lime or lemon juice. Ingredients like chopped onion and coriander are added. It is a perfect refreshing lunch on a warm and sunny day. The ingredients are pure and therefore ceviche is also healthy.

To make it even healthier and more satisfying, I have created my own version of ceviche with Quinoa. Quinoa is also from South America and goes very well with the rest of the flavors. It is extremely healthy and nutritious and was called the ‘Mother of all Grains’ by the Incas, even though it is not a grain. I also added tomato and fennel for extra vitamins, minerals and flavor. So when you crave something fresh on a warm and sunny day, definitely try this. It is really delicious!

Ingredients for two servings

  • 125g Shrimps
  • 2 limes
  • 2 tomatoes
  • 1 red onion
  • ½ fennel root
  • 70g quinoa
  • Handful of coriander

Preparing ceviche is easy. You do not need to use any heat, you just have to cut your ingredients and give it some time to marinate. Cut the onion, the tomato and the fennel root into small pieces and put it in a bowl. Add the shrimps and the juice of two limes. Mix everything and put it in the fridge for at least an hour so it has time to marinate. In the meanwhile you can cook the quinoa. Put it in a pan with twice the amount of water and cook it for 8-10 minutes. Take it off the heat and leave it with the lid on top for 10 minutes. Let it cool down in the fridge.

After an hour you can take everything out of the fridge. Mix it together in a big bowl with the freshly chopped coriander.  Have it with a good glass of white wine and enjoy!
