Quinoa Salad with Feta Cheese

One of my best discoveries in 2013 was quinoa. It is a great ingredient and I could eat it every single moment of the day. It is extremely healthy and I love it’s structure. The Incas called it the mother of all grains, we call it power food. And really, it goes with everything.

I came up with this lunch while I was hungry but not in the mood to do groceries. I looked in my fridge and prepared this salad with the things I had. After the first bite, an instand smile appeared on my face. Yum!

This salad makes me happy everytime I eat it. Not only because it is tasty but also because it makes me feel good. It contains good protein, minerals and vitamins so it is very nutricous. Treat yourself from time to time with this healthy lunch. You won’t regret it.

What do you need for one person?

1 cup of quinoa – 1 tomato – 1/2 bell pepper (I used a red one) – 1 avocado – 1/2 red onion – 10 olives – couple of walnuts – 50g of good quality feta cheese – some fresh herbs like basil or parsley – salt and pepper.

How do you prepare it?

Rinse the quinoa first and put it in a pan with two cups of water. Boil it for 5 minutes and then put it away for 10 minutes so it can absorb the rest of the water.

Chop the rest of the ingredients however you want. When the quinoa is done, you can mix everything in a bowl. Add a little bit of salt and pepper if you like and you are done. Enjoy your healthy lunch!
