If a delicious and nutritious lunch is what you are looking for, you should try this recipe. The strong smoky flavor of the trout goes very well with the freshness of the capers, the lemon and the sour cream. The fennel adds a gentle sweetness.
I try to eat oily fish at least twice a week because it is full of healthy omega 3 fatty acids. They are are good for your heart, veins and your brain. It improves your memory, your concentration and your ability to learn and develop.
Our bodies do not make omega 3 fatty acids by itself so we need to get it from other sources. Oily fish is an excellent source and trout happens to be one of them. So this recipe is not only very tasty but also healthy…and easy to prepare! This is how you do it.
- 125g smoked trout
- 1 tablespoon sour cream
- 1 big teaspoon capers
- 1/2 fennel
- 1 teaspoon fresh parsley
- 1 lemon
- 2 slices of whole wheat bread
- 2 tablespoons of olive oil
- salt and ground pepper
Cut the fennel into slices and heat up the olive oil in a frying pan. Once the oil is hot, you can add the slices of fennel and fry them for about two minutes on each side. Take them out of the pan and put them aside.
Now, take a bowl and mix the trout, the sour cream, the capers, the juice of half a lemon and some salt & pepper together. Chop the fresh parsley.
Put a layer of fennel on the bread. Put the trout pate on top of it and finish with the fresh parsley. If you like you can squeeze some extra lemon juice on top. Enjoy!
