Chicken Salad with Mango

I recently came up with this recipe and I actually like it a lot. It is fresh, sweet, the grilled chicken adds a smoky flavor and the chili pepper and the coriander give it a nice kick. Serve it with some crunchy bread and you will have a great and healthy meal.

ingredients

  • 80g mixed lettuceChicken Salad with Mango Ingredients
  • 1 mango
  • 1 avocado
  • 2 chicken breasts
  • Small teaspoon chili powder
  • One quarter of a chili pepper
  • 1 lime
  • A small hand of coriander
  • A hand full of pumpkin seeds
  • 1 small red onion or half a big one
  • Crunchy bread
  • Olive oil

Cut the chicken breasts into pieces but not too small. Put them in a bowl, together with some olive oil and the chili powder and mix it so the chicken can marinate. Now put it away for some minutes and start cutting the rest. Cut the onion into rings, the mango into dices and the avocado however you want. Chop the chili pepper and the coriander. Put the mango in a bowl together with the chili pepper, the coriander and the juice of half a lime.

Now it is time to heat up a grill pan. When it is hot you can start grilling the chicken until it is done. In the meanwhile you can put the lettuce, the avocado, the mango mix and the onion in a bowl. Add some olive oil, squeeze some extra lime on it as you like and mix it. Divide the salad onto two plates, put the grilled chicken on top and finish it off with the pumpkin seeds. Serve it with bread.
