Salmon with Haricots Verts and Pesto
Fish is delicious and healthy. Especially salmon because it is full of omega 3. The sweet tomatoes, haricots verts and pesto are an excellent combination. There is nothing better than a piece of salmon cooked to perfection so make sure you do not overcook it.
- 2 pieces of salmon
- 150g haricots verts
- 16 cherry tomatoes
- 500g small potatoes
- 2 full teaspoons of pesto
- Olive oil
- Pepper and salt
Heat up two pans of water with some salt in it. One for the potatoes and one for the haricots verts. When the water boils, add the potatoes and haricots verts. The potatoes need 20 minutes and the haricot verts 6. Take the haricots verts out of the water when they are done and put them aside and do the same with the potatoes.
Now heat up two frying pans with some oil in them. Fry the potatoes in one until they have a nice brown/golden color and fry the salmon in the other. When the potatoes and the salmon are done you can use one frying pan for the tomatoes. Fry them a couple of minutes until they get softer and add the haricots verts in the end to heat them up. The last thing you have to do is adding the pesto to the haricots verts, mix it and you are done.
