Amaranth With in Honey Fried Banana

You can literally wake me up for this breakfast. God, it is so good! It takes some time to prepare but it is definitely worth it to wake up a couple of minutes earlier. The smile on your face after the first bite will tell you I’m right.

Amaranth is a bit similar to quinoa. It looks like a grain but it is not. It is a seed. A healthy seed. It is full of fibers, protein, vitamins and minerals. Especially iron and calcium. Also, it is totally gluten-free.

There are a lot of things you can do with amaranth. You can pop it like popcorn, you can grind it into flower to bake bread or you can cook it like a sort of porridge. In this recipe we are going to do the last one.

Amaranth is quite neutral in flavor so you can combine it with loads of things. Both salty and sweet. I like my breakfast sweet so in this case, I added in honey fried bananas and a couple of superfoods.

So if you want to give yourself a good start of the day with a healthy delicious and nutritious breakfast, make yourself this once. I’m sure it won’t be the last time. Yum!

Ingredients for one person

  • 1 cup of Amaranth
  • 1 banana
  • a handful of mulberries
  • a handful of walnuts
  • 1 teaspoon of shredded coconut
  • some cacao nibs
  • 2 tablespoons of honey plus some extra for topping
  • butter or (coconut)oil

Put the amaranth in a pan and add two cups of water. Bring it to a boil, cover and simmer for 15 minutes. In the meanwhile, you can slice the banana into coins.

About five minutes before the amaranth is done you can heat up some butter or oil in a frying pan. Add the banana and fry it for a couple of minutes until it gets softer. Add the honey to the banana and fry for another 30 seconds.

When everything is done, you can mix it together in a bowl. Enjoy your warm, sweet and comforting breakfast.
