Chickpea Salad with Feta Cheese

Chickpea Salad

This is one of my favorite salads and if I want to eat a vegetarian low-carbs meal I often make it. It is super easy to prepare and very tasty. The combination of flavors is excellent and it has this Middle-East character. Keep in mind that this salad stands or falls by the quality of the ingredients so make sure you buy good ones. Especially good olives and feta cheese. I always eat it as a full meal but you can also use it as a side dish and grill some lamb chops next to it for example.

2 persons


  • 600g – 800g Chickpeas (if from a can, rinsed and drained)Chickpea Salad Ingredients
  • 1 red onion
  • 1 red pepper
  • 2 hands of olives
  • 125g feta cheese
  • 20 cherry tomatoes
  • A hand full of parsley
  • Olive oil (extra vierge)
  • Black pepper



Chop the onion, the parsley and the red pepper and cut the cherry tomatoes and olives in half. Put it together with the chickpeas in a bowl and mix it with some olive oil. Crumble the feta cheese on top, add black pepper as you like and you are done. It is that simple
