Power Breakfast: Oatmeal with Banana, Dates and Cononut

I became a morning person since the day I started to pay more attention to my breakfast. I used to eat a boring peanut butter sandwich but nowadays I like to experiment and to create healthy and tasty recipes. There are a lot of ingredients which are perfectly suited for breakfast and oatmeal is one of my favorites. It is healthy, quick to prepare, nutritious and because it is neutral in flavor, it is easy to combine with many other ingredients.

Oatmeal contains a lot of fibers. They make you feel satisfied for a longer time and they wake up your digestion system. Perfect for in the morning. Next to that it contains a lot of protein, slow carbs and antioxidants. It is gluten-free, it has positive effects on cholesterol levels and it is good for the heart. Enough reasons to have a bowl of oatmeal in the morning.

In this recipe I have added a lot of healthy sweetness and all the flavors go really well together. It is a real power breakfast and an excellent start of the day.

What do you need for one person?

40g quick-cooking oats – 250 ml milk – 1 banana – 4 dried dates – 1 teaspoon shredded coconut – a small hand of walnuts – a small hand of sliced almonds – honey as you like

How to make it!

Heat up the milk in a pan and bring it to a boil. Add the oatmeal, reduce the heat and simmer for one or two minutes. Slice the banana and the dates in the meanwhile. Let the oatmeal cool down for a littlebit once it is done and mix it with the other ingredients in a bowl or on a plate. Enjoy your breakfast!
