Noodle Soup with Shrimps


I developed my love for noodle soup while traveling through Souht East Asia. Especially in Vietnam it is a very common dish and they serve it for breakfast as well. I could eat it all day long. One of my best food memories was eating noodle soup in Vietnam’s capital Hanoi. It was in a small alley and we had to sit on very small chairs on the street. The guy was preparing our soup in a big pan of steamy broth. It was great.

I started to cook it at home as well and it is not hard to prepare at all. You only need one pan. The good thing is, you can add everything you want. So if you have some vegetables left like carrots or French beans or zucchini you can just use them. If you do not like shrimps you can replace it with chicken, or beef, or tofu, or…well, there are a lot of options.

  • 150g shrimpsNoodle Soup Ingredients
  • 125g soybean sprouts
  • 1 large paksoi
  • Half a chili pepper
  • 150g rice noodles
  • 1 lime
  • 1 tomato
  • Hand full of coriander
  • 1 liter of vegetable broth (fresh or tablets)
  • 1 thumb of ginger
  • 125g sugar snaps
  • Soy sauce

Remove the seeds from the chili pepper and chop it as well as the ginger. Cut the paksoi in pieces of 1 cm thick and the tomato into slices. Now boil the broth and add half of the chopped chili pepper, the ginger and a little bit of soy sauce.  Once it is boiling you can add the rice noodles. After two minutes you can add the paksoi, the shrimps and the sugar snaps. Give it two more minutes and take it off the fire. Now divide it into two bowls, add the tomato and put some soybean sprouts and coriander on top. Serve it with some lime which you can squeeze on it and some extra chili pepper.
