Grilled Vegetables with Mozarella and Bacon

This dish is yummie and all you need is a grill pan to prepare it. I love the fact that there are a lot of vegetables in it and it is great with the smoky flavor from the grill. The lemon and the balsamic vinegar give it a bit of a zingy twist. Green asparagus are not always available but think of this recipe when you see them and give it a try. It is a low-carb dish but if you want you can eat some nice bread with it.

  • 1 zucchiniGrilled Vegetables with Mozarella and Bacon Ingredients
  • 1 eggplant
  • 1 red pepper
  • A bunch of asparagus
  • 1 red onion
  • 2 mozzarella cheeses
  • 12 slices of bacon
  • 1 lemon
  • Balsamic vinegar
  • Olive oil
  • Salt & pepper

Cut the eggplant in 1 cm thick slices and the zucchini a little thinner. Cut the oinion in quarters and the red pepper in slices as well. The trick with the asparagus is to break the woody end off instead of cutting it because it will break on the right point. Squeeze the juice out of the lemon and rasp the skin of the lemon as well. Cut the mozzarellas in half and marinate the pieces in the lemon juice and the skin. Mix the vegetables with some olive oil so they are covered with a thin layer.

Put a grill pan of the fire and wait until it is very hot. Grill the vegetables (probably in portions) until they are done and have these great black stripes. When the last vegetables are almost done you can take the mozzarella out of the lemon juice and wrap each piece in 3 slices of bacon. Put them in the grill pan as well and grill them a couple of minutes until the bacon is done and the mozzarella a bit molten.

Put everything on a big plate and sprinkle it with some olive oil and balsamic vinegar. Add pepper and salt as you like and your dish is ready.
